    Sorry Molly - you need to spend some more time in the kitchens of southern italian cooks. There is no such thing as a dry arancini. The rice mixture is is not called 'risotto". 'Risotto' is a lovely, fragrant, creamy dish made with rice and your choice of vegetables or fish ... Riso is the base of the arancino. Arancini's ....the new mozzarella sticks? No, grazie.

    I made my first risotto ever today, based on this recipe but adding green/red bell pepper and zuchinni to the sofrito...
    It was a total success!! Super easy and delicious. Next time I'll do the Arancini :D

    These arancini are definitely a twist on the classic. The ones I know include saffron to color the rice as well as tiny bits of parsley and/or a few peas in the rice, a dollop of tomato sauce in the center with a cube of mozzarella and finished into an iconic cone shape. Your gourmet version does look delicious though!

    Arancini need tomato sauce too. It’s not just the risotto. They need to be mixed in with just a bit of tomato sauce so they look kind of pink on the inside.

    Honestly these are not arancini, writing from sicily i can assure you that these thing are nowhere to be found nor in restourants nor in any sicilian home.
    1st: no need for the risotto just put in a pot 2,5lt of tap water for every 1kg of rice (you got the right kind of rice, carnaroli is oK, do not use blond or other stuff), we also put in there saffron to make it yellow.
    2nd: the stuffing with just mozzarella does not exists, either with ragù (a very dry one, you will need to make balls of it) or with prosciutto and scamorza held toghether by besciamella (ideally instead of scamorza you will want to use "primo sale" a kind of sicilian cheese)
    3rd: you can pass the finished arancini in beaten egg but the better option is to use a light mixture of water and flour, eggs are generally used on the 13th of december because it is tradition not to eat flour or flour derivatives during that day (it is a strange sicilian tradition based on some saint).

    btw, calabrian chilly is not sicilian, as the name suggest they are from Calabria. We do not dip our arancini, and they tend to be bigger, more or less as a human fist.

    Real quick: Calabrian chilis can’t be Sicilian...they’re literally Calabrian (from Calabria...that’s a different region in Italy...entirely). Arancini are Sicilian. Calabrian chilis are calabrese. Have a nice day.

    you wanna know why arancini are always so dry? cause you guys make them THE WRONG WAY! Usually in sicily we cook saffron risotto and stuff the arancinis with ground meat and peas... and the real size of arancinis is about the size of a fist. keep that in mind thanks

    Omg I just made these the other day bc I saw a video/recipe on Facebook and I actually had all the ingredients so I said why not. Recipe called for rice and not risotto though, and I did not put onions since I don't care for them. They actually came out fantastic, and then I see you guys have a video on it, awesome!
