When my (Scottish) Grandma had to go into surgery back when I was in University, she made enough Scots meat pies for my Grandpa to cover her stay in the hospital. He burns water. She left him clear written instructions on how to warm them up. Well one afternoon, he called me and asked me to come over and watch the hockey game (we live in Canada) and said that my Uncle Sandy was coming too. Long story short, Sandy, Poppa and I ate all of the pies in one evening and Sandy and I had to take him out for supper for the next week LOL.

I made this last week. I said I would. It was by far the best crust I ever made. Some “chef” said to just use store bought pie crust bcs it’s easier and the results are the same. Pfft~The tip you gave of putting it on the bottom rack was a winner too. Thanks !
@Hong Tse I did use less! I ran out of shortening, haha. Almost the same. 90g..oh wait, you’re asking if you need it, yes you do need the butter and shortening if you want this traditional kind of crust. There are other crust recipes using grated cold butter and such. Look it up. Cheers

They were totaly blown away, and I started with a broccoli stilton soup(had to use roquefort), and as dripping lard are very hard to find here, I even had to render my own fat. @w2gMk Quarts are used all the time in cooking. I used 3 quarts of water yesterday for my pressure canner.
@Dena Crescini Nonsense. Anyone can learn a new system if they're not mentally disabled and have the drive to do so. I didn't know metric until my 20s. Just over 20 years ago, NASA made an attempt to transition to metric for their engineering plans, so I had to learn metric. It was about a year and a half failed experiment on their part and we went back to imperial, but I still know a lot of metric conversions and measurements. Your attitude about incapability comes from a lack of necessity, not logic. Is it more difficult as an adult? Yes. But adults still learn to play instruments or foreign languages late in life out of a desire to do so. Learning new units is no different.

How do you convert .2 ounces,gallons,lbs...to an accurate imperial measure?
A lot of older British cooks still use the imperial system since they never learned the metric system in school. I assume that's one of the primary reasons why he offers imperial measurements.

Went to the UK a few years ago. I was blown away by the cuisine. The pies, the SALMON, the pastries, the lamb, the local produce, and yes even the haggis was delicious. Edit: I bet these pies would be good with a Beef-Pork-Lamb or a Beef-Pork-Veal mix. Or even a ground sausage mix. The sky is the limit, boys!

In Louisiana we have Natchitoches meat pies and they are delicious! And I bet these are as well. I’m not very experienced with making a pie crust but I’m sure going to try my luck. I wish I had access to lamb meat so I could make some authentic pies with this recipe. But I’ll have to make do with a combo of beef and pork. Thanks for sharing

I like the way that you keep the seasonings/spices down to a very minimal level... That way, you get the full and pure flavour of the (in this case) lamb mince... I often tend to 'over-season' which can be overpowering to the subtle flavour of lamb or chicken. (I'll take on from now on, John!) xx SF

Mmmm ... I went to university at St Andrews for 4 years (1981-85) and have very fond memories of these scotch pies which I think are called 'bridies'. I will be making this recipe John to relive the experience :)
Bridies are a different shape (flattish half-moon) and they are made with flaky pastry with a filling of minced beef. If you look up traditional Scottish Forfar bridies, you can find plenty of recipes on the net. They are also just as tasty as these Scotch pies.

Hi John. Well mate, you've certainly inspired me to make these pies. I did have a look at your other videos to see what you give to us You Tube Dudes. I stopped and watched how you transformed Brussell sprouts into a Christmas dish. I think your choice of foods are terrific and as an ex-POM now living in Australia for decades, I'm gonna try many of your recipes. By The Way, the missus is Chinese but I reckon I can change her eating habits to good old English food now that I'm retired and spending more time in the kitchen. Catch ya later mate!

Pies like this are absolutely everywhere in New Zealand, though we don't have any broad prefix delineation such as Scotch. they're just denoted by the filling type, steak and kidney, mince, etc. Every corner store, bakery, and gas station has pies, and you can often get a pretty good mince pie in any corner store in any small town on a road trip. (as long as its not pre-fab frozen shit, a lot make it themselves) They're more commonly eaten as a stand-alone thing than has part of a full meal here, though I have had full-scale pie pea and gravy as depicted in this before too.
In any case, this recipe looks both easy and fantastic and I'll definitely be trying it. As nice as the ones you can buy here are, I've found with most things that you can't beat what you make yourself and I'm sure the same'll be true with this once with the aid of your lovely recipe.

Found my way here after going down a pot pie rabbit hole. It's like watching my old uncle Reg in the kitchen. The only difference is he'd punctuate statements with a rattle of his scotch glass, and usually by the end of cooking the scotch had made his accent so thick that only the family could understand him. lmao

What a joy to listen to his calm concise way that he explains things,. I could listen to him every day. I was imagining my dads' Scots grandmother making meat pies, which makes sense as she ended up in Canada where they do meat pies too. I wish I had grown up with this, I am going to make it, as I love lamb and channel my Scots ancestors.. It is about time I do a hot water pastry, I will be 71 soon enough.

As an alternative to using the "corn flour" which I believe is "corn starch" here in the U.S. you can make a roux. Making a roux is pretty basic. It is equal parts flour and fat. So say a cup of flour and a cup of canola oil, or butter, or olive oil. The trick is using a fat the compliments what you're thickening. In this case, what I'd do is make a roux out of the fat he strained from the stock. Using a roux to thicken things is more advisable than using corn starch, as it doesn't take away as much flavor. To make a roux, heat the fat, then add the flour, and cook, 3 - 5 minutes for a "blonde roux" and up to 40 - 60 minutes for a "dark" roux. Do not let your roux unattended, stir it continuously. Obviously the darker the roux, the darker it'll make what you thicken. So you don't want a dark roux for new england clam chowder, and you don't want a light roux for beef gravy. Darker rouxs also have a more pronounced nuttier flavor to them.

This is so wonderful and cozy. It makes me strangely homesick for England, even though I'm German - but it's always been my favourite holiday destination and I really miss it. Thanks for giving me a little piece of "home" I can cook myself!
@Revenge Nerd I think the homesick feeling is more about the presenters voice, attitude and the fact that it's a pie.... I don't think the fact this is a scotch pie matters too much and even if it did the English have been making them for a thousand years and more..
What a charming comment! I get 'homesick' for places I've visited and loved too, I know exactly what you mean. Whenever I make Russian pickle soup and serve it with dark rye bread I think of making it in the kitchen of my holiday apartment in Berlin. So I make it often in winter just to bring back the feeling of being in Germany. Same goes for Japanese food. Can't wait to travel again. I miss the world! :D

I have extra pie pastry leftover from "Pi" day and thought that I nice meat pie would be nice rather than making more pot pies and fruit pies. The filling and gravy recipes will be perfect.

Oh John, the most impressive thing for me is people who make REALLY GOOD pastry from scratch. Whether it's sweet or savoury, if you can knock it out of the park then your recipe is already 85% there. Great pastry is how I know I'm dealing with a really good cook. They make it look really easy and it isn't. Same goes with making croissants from scratch. Deeply impressive.
